While the grilled sausage as such was already mentioned in antiquity, you can find the first documented evidence of sausages made in Thuringia in the state archive of the Thuringian town of Arnstadt from the year 1404.

Since 2004, the designation Thuringian Sausage has been protected as a "protected geographical indication". The product is recognized by the European Union as a designated regional specialty. The Thuringian and Eichsfelder Sausage and Meat Association (HTW) has since ensured that no one violates the brand's origin principle. In the early years after recognition, there were numerous proceedings against different companies because they repeatedly marketed random sausages under the Thuringian brand name.

The Production Of The Thuringian Sausage

In principle, the Thuringian Sausage does not differ from grilled sausages from other regions in terms of the processed meat. However, it is the exact composition of the typical spices that make the difference and make the taste unique. The production takes place under very high quality standards and is a recognized Thuringian craftsmanship.

You can get a Thuringian grilled sausage in both raw and parboiled forms. The composition usually consists of 35 percent pork shoulder and 35 percent lean pork. In addition, there are 15 percent pork cheek and 15 percent ice snow. The spice mixture used can vary slightly depending on the region in Thuringia as part of the recipe tradition. Primarily, your Thuringian sausage contains marjoram, caraway, and garlic, as well as, of course, salt and pepper. It is common for each master butcher in Thuringia to have their own unique recipe.
