Thuringian Rostbrätel (also called Rostbrätl) is a classic of East German cuisine and is traditionally served from the grill. In this recipe, we show you how to prepare the beloved DDR-Rostbrätel yourself to enjoy the authentic aroma and juicy consistency of this specialty at home.
Ingredients:
- 4 Pork Neck Steaks (200 g each)
- 2 Large Onions
- 150 ml Beer (e.g. Pilsner)

- 2 Garlic Cloves
- Salt and Pepper
Preparation:
- Peel the onions and cut into thin rings.

- In a bowl, mix mustard, oil, beer, paprika powder, and chopped garlic.
- Place the pork neck steaks in the marinade and cover them well with the marinade.
- Distribute the onion rings over the steaks and marinate everything in the refrigerator for at least four hours, preferably overnight.
- Remove the marinated steaks from the refrigerator and grill on both sides at medium heat for about five minutes until well browned and cooked through.
- Season the steaks with salt and pepper and serve with the onion rings.
